On August 9, Health Service Center co-sponsored the food education program "Kanazawa Food Culture Experience: Nigiri-sushi Class" with KEYPAT*. 21 students, including 3 international students, participated in the program.
Under the guidance of Katsuaki Yoshida, the owner of Sentori Sushi, the participating students made nigiri-sushi and inari-sushi (triangle-shaped sushi, Kansai style) using six types of ingredients: two types of gando (yellowtail), pickled tuna, squid, sweet shrimp, and salmon caught in Wajima and Nanao.
Mr. Yoshida taught the students the difference between sushi and sushi, the history of sushi culture in the Kanto and Kansai regions, and sushi-making techniques. Afterwards, the participants compared the sushi made by the instructor and the sushi made by the students themselves, and enjoyed eating them together with Kanazawa's local delicacy, "metta-jiru”.
Reasons for participating included "I like sushi and was interested in it," "I was interested in how to make nigiri-sushi," and "It looked like fun. I enjoyed it very much," "It was a good opportunity for me because I have never had a chance to learn directly from a craftsman," and "I also enjoyed talking with other college people." "I want to be a sushi chef."" I feel great to be the one in the participant. If I have a chance I want to join it again."
